What is a bit in BDSM?
A bit is a long mouthpiece that sits in the mouth, behind the teeth, made of rubber, leather, wood or metal. The word and the object both come from the world of horses. In BDSM a bit works as a gag, and in ponyplay it steers the person wearing it.

Why does the material matter more than the shape?
With a bit, the shape matters less than what it’s made of. Rubber and soft leather give under the force of a jaw; wood and metal don’t. Teeth that bite down on steel for hours are the teeth that get the bill.
What to watch for
The posture is the point and the problem at the same time. A bit holds the mouth half open and forces the jaw into position, which after a while brings pain in the jaw joint.
And the ordinary gag rules still apply. The same source warns that a gag carries a serious risk of choking if the nose gets blocked, that vomiting and gagging block the airway further, and that no one wearing a gag should ever be left alone.
